Demand of buns made with Bougainville cocoa rise

IT’S Easter and the Stop & Shop is selling chocolate hot cross buns in Port Moresby, made with chocolate from Bougainville cocoa.
City Pharmacy Ltd’s Country Fresh Bakery manager Noel Medlicott took The National on a tour of the bakery at SNS North Waigani yesterday.
“It is really on high demand so we are baking every day,” he said.
The bakery, which has 90 staff, supplies all of SNS shops in Port Moresby.
Country Fresh Bakery production manager at SNS North Waigani Albert Kuyo said they had been baking a couple of hundred packets per day, but due to demand, they would supply about 3,000 to 4,000 packets this week and over the Easter weekend.
“We are using the Bougainville cocoa” Kuyo said.
“We are also using the Bougainville milk chocolate and Bougainville dark chocolate, so it is really Papua New Guinea all the way.”
Preparation takes around 30 minutes from mixing the dough (10 minutes) to about 18 minutes in the oven.
The buns are cooled and packed and put on shelves in the shop.
Every Easter SNS sells hot cross buns and this year, Kuyo was tasked to put in Bougainville cocoa.
He came up with several samples before getting the nod from Medlicott.
