A LOCAL businessman who cooks food on the street for sale is determined to beat the well-established fast food outlets by providing well-cooked meals.

Sinai Tai, 30, from Liagiam in Enga told The National last Friday that the health of people was very important and it was why he ensured that preparing food for his customers was done properly.

Sinai has been selling roasted lamb flaps for the past four years at Daure Street, 5-Mile in Port Moresby.

“The health of my customers is very important so I try to maintain the way I prepare the lamb flaps and kaukau,” he said.

He said many  Asian shops sold food, which was not cooked properly.

“We are Papua New Guineans, we need to learn to prepare our food so we know exactly what we are eating rather than buying food from Asian shops,” he said.

He said only a few customers bought food from him when he started but maintained his standard of preparing meals.

Now gets between 70 and 80 customers every day.

“I trust myself with my cooking. I prefer cooking the meat myself because when we have too many hands preparing one thing, it will spoil the taste.”
